6 venison chops
2 Tbsp safflower oil
1 large onion, sliced
1 lemon, sliced
1/2 cup firmly packed dark brown sugar
salt and pepper
6 Tbsp tomato catsup
4 Tbsp Jack Daniel’s, Black Label Whiskey
In a large skillet, heat safflower oil and brown chops over medium heat. Season with salt and pepper generously. When browned, place the chops in a shallow baking dish. Place one onine slice and one lemon slice on top of each chop. Combine remaining ingredients and spoon over the top of each chop.
Cover and bake at 350 degrees for 30 minutes. Remove the cover and bake 25 minutes or until done. Spoon basting sauce over chops occasionally.
